Pico De Gallo

Ingredients:

   10 Garden tomatoes
   1 Big white onion
   4 Jalapeno peppers
   1 Large bundle of cilantro
   2 Ripe avacados
   1 Half of a lime
   2 Tablespoons of salt

Instructions: Slice and dice the tomatoes into 3/8" cubes and put in a large metal or glass bowl.
   Chop the white onion into moderate sized pieces and add to the bowl.
   Chop the jalapeno peppers fine and add to the bowl.
   Fine chop the cilantro and add to the bowl.
   Peel the avacado and remove the seed then slice and dice it into 1/4" cubes and add to the bowl.
   Add the salt and squeeze the lime into the bowl and stir well.
   Cover with lid or plastic wrap and chill for a few hours or so in the frig.
   Heat some white corn tortillas and place some sliced smoked pork tenderloin or turkey breast in them and spoon in some pico de gallo, roll them up and eat!



Rocki's Meatloaf

Ingredients:

   3 lb hamburg
   1 box stove top stuffing
   1 lg tomatoe diced
   1 small can tomatoe sauce
   1 C diced onions
   1 C diced green peppers
   3 eggs
   2 T mustard
   pepper to taste

Instructions: Mix all ingredients in a large bowl including season packet from stuffing. Add pepper to taste.
Form into 6 single serving sizes.
Bake at 350 for 1 hr til done.



Chicken & Biscuits

Ingredients:

   2 or 3 boneless chicken breasts, (boiled until tender)
   1 large can, Campbells Cream of Chicken Soup
   1 small can carrot slices

Instructions: Pour soup into a pot. Add carrots and shredded chicken. Serve over biscuits!



Mexican Stuffed Shells

Ingredients:

   2 lbs ground beef, (ground turkey can also be used)
   1 lb jumbo shells
   1 lb monterey jack cheese with jalapenos~shredded
   1 lb cheddar cheese~shredded
   1 small can of diced green chiles~drained
   ! medium onion~diced
   2 small cans tomato sauce
   2 jars mild, medium or *HOT* salsa. ;-)
   ˝ c to 1 cup water

Instructions: Preheat oven 425 degrees. Cook shells according to package directions. Brown ground beef with onion and green chiles. Meantime, mix 2 cans of tomato sauce with both jars salsa, add water in small amounts. Don't want it soupy. ;-)
Drain meat mixture, add 1 cup salsa mix to meat, ˝ lb of both cheeses, heat til melted.
Drain shells, pour salsa mix into a 13 x 9 cake pan to cover bottom of pan. Spoon meat mixture into shells, place in pan, cover shells with remaining sauce, cover with foil. Bake 30 minutes, remove foil, add remaining cheese and bake til cheese melts. YUM! Serve with extra salsa, sour cream, black and green olives. Even some Doritos on the side...good good good stuffers!



Zuccini Quiche

Ingredients:

   4 cups thinly sliced zuccini
   1 sm. diced onion
   1 cup bisquick
   5 eggs (beaten)
   1/4 cup olive oil
   1/2 cup sharp cheddar cheese
   1/2 t. oregano
   1/2 t. salt
   1/2 t. pepper

Instructions: Mix all ingredients well, and
pour into a 10 in. greased
pyrex pie dish and cook for
30 minutes at 350 degrees.
Serves 8.



E-Z Turkey Roll-ups

Ingredients:

   8 slices deli sliced turkey
   8 half slices swiss cheese
   1 box stove top chicken stuffing (or homemade)
   1 can cream of chicken soup
   Half a soup can of milk

Instructions: Preheat oven 350 degrees

Cook Stuffing according to package directions.

While stuffing cooks, open can of cream of chicken soup, add half can milk, whisk til no longer lumpy. Set aside.

Lay out turkey slices

Add cheese to turkey

Add 1 large tablespoon stuffing to turkey use spoon to spread evenly.

Roll up turkey, set seam side down in baking dish.

Pour soup mixture over turkey, bake for 20 minutes.

Serve with asparagus, green beans or salad.

Turkey ala-king

Ingredients:

   Leftover turkey breast
   dehydrated onions and a can of creamed soup. A bit of milk
  

Instructions: Cut turkey breast in smaller pieces. Add onions and the creamed soup with a bit of milk to creamed consistency. Heat and eat over rice or toasted bread



Poor Man's Shepard Pie

Ingredients:

   1 to 1-1/2 lbs. ground beef
   1 diced onion (optional)
   2 cans beef gravy (with mushroom is optional)
   1 can or 1 pkg. frozen cut green beans
   Boiled potatoes - as many as desired

Instructions: Peel & start cooking potatoes (Don't salt till done - leeches out the vitamins)
In fry pan cook hamburg and onions. Use spatula to break meat apart. When done add beef gravy and green beans while saving the juice from the green beans to use for thinning the gravy if desired. Bring to a boil. Simmer till potatoes are cooked. Mash cooked potatoes or just squish with fork and add gravy mixture on top to your heart's content. You can substitute tomato soup for gravy and whole kernel corn for green beens doing everything else the same and place this on the potatoes. Freezes nicely.



MANGO AND RED PEPPER BBQ SAUCE

Ingredients:

   2 cups chopped sweet red pepper
   1/2 cup chopped onion
   2 Tbls. cooking oil
   2 medium mangoes, peeled, seeded and chopped (2 cups)
   1/4 cup brown sugar
   2 tbls. rice wine vinegar
   1/2 tsp. crushed red pepper flakes
   1/4 tsp salt
   2 tbls. finely chopped green onion

Instructions: Cook onion and red pepper in oil til tender. Stir in brown sugar, mangoes, vinegar, crushed red pepper flakes and salt. Bring to a boil and simmer 10 minutes. Cool slightly. Transfer to a food processor or blender and process til nearly smooth. Remove to a bowl and stir in green onion.
To use: Brush on chicken, shrimp, pork or fish during last 10 minutes of grilling. Reheat sauce and serve as extra if desired. Makes 2 1/2 cups
