Breakfast Casserole

Ingredients:
1 can cresent rolls
1 doz eggs
Grated Velvetta cheese
1 lb. sausage (cooked and drained)
Salt and Pepper to taste
9x13 inch pan
Instructions: 1. Lay rolls flat in 9x13 inch greased pan.
2. Put cooked sausage over dough
3. Beat together eggs, milk, and salt and pepper to taste.
4. Spread egg mixture over sausage.
5. Spread grated velvetta cheese over top.
6. Bake at 350 degrees for 15 miinutes..or whatever time the rolls have for the baking time.
SWEET POTATO BREAD

Ingredients:
2 1/2 CUPS SUGAAR
1 Cup Oil
4 Eggs
2 cups mashed S. potatoes (or
ONE 1 lb. can S. potatoes)
3 1/4 cups All-Purpose flour
2 t. baking soda
1 1/2 t. salt
1 t. nutmeg
1 t. cinnamon
1 t. allspice
1 t. vanilla
1 cup chopped nuts
1 cup chopped dates
1/4 cup All-Purpose flour
Instructions: Cream sugar and oil together.
Add eggs, one at a time, Sweet
Potatoes, 3 1/4 cups flour, soda
salt, spices and vanilla. Coat
nuts and dates with 1/4 cup flour and fold into batter.
Grease 4 (l-pound) coffee cans
with pan coating(below) Fill
cans 1/2 full of batter. Bake
aat 350 degrees for 1 hour.
(This bread freezes well and is
better stored a few days)
PAN COATING: 2 PARTS SHORTENING
1 PART FLOUR

BANANA BLUEBERRY MUFFINS

Ingredients:
2 CUPS WHOLE WHEAT FLOUR
1/3 CUP BROWN SUGAR
1/2 TSP. GROUNG CINNAMON
2 TSP. BAKING POWDER
1 TSP. BAKING SODA
1 1/2 CUPS MASHED BANANAS
4 EGG WHITES
1 TSP VANILLA
1 CUP BLUEBERRIES
Instructions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 12 cup muffin pan.
In a large bowl, mix the whole wheat flour, brown sugar, cinnamon, baking powder, and baking soda. In a separate bowl, mix the bananas, egg whites, and vanilla extract.
Mix the banana mixture into the flour mixture until smooth. Fold in the blueberries. Spoon the batter into the prepared muffin pan.

Ingredients:
Large or XL eggs (2 or 3 per person), cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.
Instructions: Everyone writes their name on a quart size Ziploc bag with a permanent marker. Crack 2 or 3 eggs (depending on how much of the other ingredients you're going to use...don't want it to be too dry) into the bag and shake to mix. Put out a variety of ingredients pertaining to your tastes. Each person adds prepared ingredients of their choice to their bag and shake. Make sure to get the air out of the bag and zip it up. Place bags into rolling, boiling water for 13 minutes (for 2 eggs, a little longer for 3 eggs). Can usually cook 6 to 8 omelets in a large pot. Rolls right out of the bag. I recommend if you are going to use salsa to use it as a topping after cooking instead of putting in the bag before cooking. Can be fixed ahead the night before and then just cooked the next morning. NOTE: I take no credit for creating this recipe, because I did not, and have no idea who did. I am just sharing it.

Instructions: BOILE BARELY,ONION AND GARLIC UNTIL BARELY IS POP OR IN A PRESSURER COOKERFOR 20 MINS ON MEDIUM THEN ADD THE SALT PRPPER AND BUTTER AND PATATOES IF U PREFFERD. COOK THE IN PRESSURECOOKER FOR ANOTHER 20 MINS OR UNTIL IT IS ALL MELTED.
